Ingredients

  • 1 cup quinoa 170g
  • 2 cups water 480g
  • 2 poblano peppers 120g
  • 1 cup black beans, drained and rinsed 170g
  • 3 tbsp olive oil 40g

Steps

  1. Step 1

    Preheat the oven to 425°F. Toss the whole poblano peppers with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 20 minutes, turning halfway through, until the skins are blistered and charred. Remove from the oven and let cool, then peel off the skins, remove seeds, and chop into bite-sized pieces.
