Flourless Chocolate Torte
A rich, velvety chocolate dessert with a deep, dark chocolate flavor and a light, airy texture. This classic torte is made with melted chocolate, carefully folded with eggs and sugar, then baked to perfection.
Ingredients
- 4 large eggs
- 1 tsp pure vanilla extract
- ½ lb dark chocolate chips (at least 70% cocoa)
- 120g unsalted butter
- ½ lb granulated sugar

Step 1
Preheat the oven to 425°F (220°C). Butter a 9-inch (23cm) springform pan and line the bottom with parchment paper.

Melt the chocolate and butter in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.

In a medium bowl, whisk together the eggs and sugar until pale and thick, about 3-4 minutes.

Add the vanilla extract to the egg mixture and whisk to combine.

Pour the melted chocolate mixture into the egg mixture and gently fold until no streaks of egg remain.

Pour the batter into the prepared pan and smooth the top. Bake for 25 minutes, then reduce the oven temperature to 375°F (190°C) and continue baking for an additional 15-20 minutes, or until the edges are set and the center is still slightly jiggly.

Remove from the oven and let cool in the pan for 10 minutes before releasing the springform and transferring to a wire rack to cool completely.
