Ingredients
- 8 large eggs
- 1 ½ cup diced yellow onion
- 3 cloves minced garlic cloves
- 2 cup diced tomatoes
- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp paprika
- 1 loaf crusty bread

Heat 1 tbsp olive oil in a large non-stick skillet over medium heat. Add 1.5 cups diced yellow onion and cook, stirring occasionally, until softened and translucent, about 5 minutes.

Add 3 minced garlic cloves to the skillet and cook until fragrant, about 30 seconds.

Add 2 cups diced tomatoes to the skillet. Cook, stirring occasionally, until they start to break down and release their juices, about 5 minutes. Season with 0.5 tsp salt, 0.25 tsp black pepper, and 0.25 tsp paprika.

In a large bowl, whisk 8 large eggs together. Pour the eggs over the tomato mixture in the skillet. Cook, stirring gently, until the eggs start to set, about 2-3 minutes.

Reduce heat to low and continue cooking, covered, until the eggs are almost set but still slightly runny, about 5 minutes. Use a spatula to gently lift and fold the edges of the Menemen towards the center, allowing uncooked egg to flow to the edges.
