FOR THE VEGETABLES
- 3 cups spring mix vegetables (such as bell peppers, zucchini, carrots, and broccoli) 375g
- 4 cloves garlic cloves 12g
FOR THE SAUCE
- 3 tbsp olive oil 40g
- ¼ cup fresh parsley 15g
- ¼ cup fresh basil 15g
- 2 tbsp lemon juice 30g
- 1 tsp salt 5g
- ½ tsp black pepper 2g
- 1 lb pasta (such as bowtie or penne)
- 1 cup grated parmesan cheese 120g

Step 1
Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve 1 cup pasta water before draining.

Meanwhile, heat olive oil in a large skillet over medium-high heat. Add minced garlic cloves and cook until fragrant, about 30 seconds.
