Pasta Primavera
A vibrant and flavorful spring-inspired pasta dish loaded with sautéed seasonal vegetables, garlic, and herbs, all tossed in a light and zesty olive oil sauce. Ingredients
- 3 cup spring mix vegetables (such as bell peppers, zucchini, carrots, and broccoli)
- 4 cloves garlic cloves
- 3 tbsp olive oil
- ¼ cup fresh parsley
- ¼ cup fresh basil
- 2 tbsp lemon juice
- 1 tsp salt
- ½ tsp black pepper
- 1 lb pasta (such as bowtie or penne)
- 1 cup grated parmesan cheese

Step 1
Bring a large pot of salted water to a boil. Cook 1 pound pasta according to package instructions until al dente. Reserve 1 cup pasta water before draining.

Meanwhile, heat 2 Tbsp olive oil in a large skillet over medium-high heat. Add 4 minced garlic cloves and cook until fragrant, about 30 seconds.

Add 3 cups mixed vegetables to the skillet and cook, stirring occasionally, until tender-crisp, about 3-4 minutes.

Stir in 0.25 cup chopped fresh parsley, 0.25 cup chopped fresh basil, and 2 Tbsp lemon juice. Cook for an additional 30 seconds.

Add the cooked pasta to the skillet, tossing to combine with the vegetable mixture. If needed, add some reserved pasta water to achieve a light sauce.

Season with 1 tsp salt and 0.5 tsp black pepper. Serve hot, topped with 1 cup grated Parmesan cheese.
