Pan-Seared Branzino with Pesto
Flaky fish with a vibrant and herby sauce.
Ingredients
FOR THE BRANZINO
- 2 fillets branzino 340g
FOR THE PESTO
- 1 cup fresh basil leaves 20g
- 3 cloves garlic cloves 9g
- ½ cup parmesan cheese 60g
- ¼ cup extra virgin olive oil 60g
- 2 tbsp lemon juice 30g
- ¼ tsp salt 1g
- ⅛ tsp black pepper 1g
FOR SERVING
- 1 cup cherry tomatoes 120g
- 2 slices fresh mozzarella 60g

Step 1
Rinse the branzino fillets under cold water, pat them dry with paper towels, and season both sides with salt and pepper.

Heat a large skillet over medium-high heat. Add olive oil and sear the branzino fillets skin-side down for 4 minutes, until the skin is crispy. Flip and cook for another 3-4 minutes, until cooked through.

In a food processor, combine fresh basil leaves, garlic, parmesan cheese, and extra virgin olive oil. Process until smooth, then squeeze in lemon juice and season with salt to taste.
