Citrus Herb Salmon
Pan-seared salmon with a zesty citrus-herb marinade, served with quinoa and roasted vegetables. This dish balances the richness of the fish with bright, citrusy flavors and a side of complex carbohydrates and fiber.
Ingredients
- 4 fillets salmon
- ¼ cup fresh parsley
- ¼ cup fresh dill
- ¼ cup fresh basil
- ½ cup lemon juice
- ¼ cup lime juice
- ¼ cup orange juice
- ¼ cup olive oil
- 1 cup quinoa
- 2 brussels sprouts

In a blender or food processor, combine parsley, dill, basil, lemon juice, lime juice, orange juice, and garlic. Blend until smooth.

With the blender or food processor running, slowly pour in olive oil until the marinade is well combined.

Place salmon fillets in a shallow dish and brush the citrus-herb marinade on both sides of the fish. Let marinate for at least 10 minutes.

Preheat oven to 400°F (200°C). Rinse quinoa and cook according to package instructions.

Toss Brussels sprouts with olive oil, salt, and pepper on a baking sheet. Roast in the oven for 20-25 minutes, or until tender and caramelized.

Heat a skillet over medium-high heat. Add the marinated salmon fillets, skin side up (if they have skin). Cook for 3-4 minutes per side, or until cooked through.
