Chicken Shish Kabobs

Ingredients
- 1 ½ breasts boneless skinless chicken
- ¼ cup olive oil
- 2 tbsp freshly squeezed lemon juice
- 3 cloves minced garlic
- 1 red bell pepper
- 1 yellow bell pepper
- 1 pint cherry tomatoes
- 1 onion
- 1 tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper

In a large bowl, whisk together olive oil, lemon juice, minced garlic, and dried oregano. Add the chicken breast, cut into 1-inch pieces, and marinate for at least 10 minutes, or up to 30 minutes in the refrigerator.

Preheat the grill to medium-high heat. Thread the marinated chicken, red and yellow bell peppers, onion, and cherry tomatoes onto skewers, leaving a little space between each piece.

Season the skewers with salt and black pepper. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
