Chicken Caesar Salad
A classic Chicken Caesar Salad with juicy grilled chicken, crispy romaine lettuce, crunchy croutons, and shaved parmesan cheese, all tied together with a rich and tangy Caesar dressing.
Ingredients
- 1 ½ breasts boneless skinless chicken
- 2 heads romaine lettuce
- ¼ cup olive oil
- 3 cloves garlic
- 1 cup crusty bread
- 1 cup parmesan cheese
- 2 tbsp freshly squeezed lemon juice
- 2 tbsp anchovy paste
- 1 tsp dried oregano
- 1 tsp dijon mustard
- 1 tsp worcestershire sauce

Step 1
Preheat grill to medium-high heat. In a large bowl, whisk together olive oil, lemon juice, garlic, and herbs. Add the chicken breasts and marinate for at least 5 minutes.

Grill the chicken breasts for 5-6 minutes per side, or until they reach an internal temperature of 165°F. Let rest for 5 minutes before slicing.

Meanwhile, cut the crusty bread into 1-inch cubes and toast until crispy. Toss the romaine lettuce with the toasted bread croutons.

In a blender or food processor, combine anchovy paste, Dijon mustard, Worcestershire sauce, and lemon juice. Blend until smooth. With the blender running, slowly pour in olive oil until the dressing is emulsified.

Shave the parmesan cheese over the salad and drizzle with the Caesar dressing. Toss to combine.
