- ⅓ cup cold coconut oil for strusefl, solid 60g
- 2 tbsp granulated sugar for strusefl 25g

- 1 large large egg, for egg wash 50g
- 1 tbsp water for egg wash 15g

Prepare the pie crust by whisking all-purpose flour, granulated sugar, and salt in a large bowl. Cut in solid cold coconut oil using a pastry cutter or fingers until the mixture resembles coarse crumbs. Gradually add ice water, mixing gently until dough just comes together. Form into two discs, wrap in plastic, and chill for at least 30 minutes.
